I am just getting started kegging and have a question.

I have read a lot of articles about forced carbonation and slower carbonation over time.  But keep reading conflicting information about keg storage.

After if rack the beer into the keg and put CO2 in the keg to get rid of the air in the keg.  Can I just store the keg at room temp and then cool and carbonate right before drinking?  Or should I cool and carbonante and then store in the frig or can I store at room temp?

My kegerator has two taps, but my fear is brewing and not having room in the frig newly brewed kegs.

Hi,

I've done both and the results almost always turn out better when I cool it the entire time.  I have a converted freezer with room for 3 1/6th or 3 corny (or some combination) just for this reason.  The beer just doesn't taste the same after hanging at room temp for a long time.
